What to do with Thanksgiving leftovers.

I certainly have been posting a lot today! We made this dish tonight using leftover Thanksgiving turkey. Rather than roasting an entire turkey, we did two 7lb hotel-style turkey breasts for 7 diners. So as you can imagine, we had a lot of leftover meat.

I love this dish so much more than the Thanksgiving meal. XD

Tomorrow we're going to use the turkey carcasses to make turkey noodle soup. Because the holiday season is all about cooking (and gaining weight).
