Nov. 2nd, 2010 05:29 pmYeah, I love winter squash a lot. Autumn is one of my happiest times of the year, because all the cute gourds come out. I generally roast winter squash and season it with melted butter and brown sugar, but sometimes, I want to try somethng different.
Pumpkin is a winter squash, right? People make desserts with pumpkin, so why can't you make desserts with carnival, buttercup or sweet dumpling squash?
So here it is...my first squash cobbler. I think the butter cookie topping goes really well with the cubed squash filling.

All right, I'm kidding! This is really mango! We usually make this dessert with apples, but this time Kristen was hell-bent on making it with frozen mango chunks from Trader Joe's. I'm glad I let her have her way. It's probably one of the best cobblers we've ever made. :D...
