That being, the ability to MAKE OMELETS.


With fillings in them, and everything. XD Does anyone dare to laugh at me? I've been cooking for 11 years and I never figured out how to make a decent filled omelet. Either the egg would dry out, the top would never cook, or the damn thing would fall apart when I was folding it over and transferring it to a plate. Well, thanks to some advice from Cooks' Illustrated I found out that the best way to cook the top of the omelet and melt the cheese filling is to...::drum roll::...put a lid on top of the pan and STEAM IT! :O I can't believe it--this is the first time I've heard this. I usually steam the top of sunny-side up fried eggs to keep them from being too runny and gross, but really...do people usually do this? People who make omelets all the time? I'm so thrilled that I finally figured it out. A few years ago I found a great recipe for an omelet with bacon and Smoked Gouda and it turned out horribly; the bottom got too browned and the filling never got heated through. This morning I made a gorgeous omelet with provolone and sundried tomato pesto. The egg was nice and tender and the cheese just gushed out when I cut the omelet open with a fork. The pesto did leak some nasty orange oil all over the serving plate, but I cleaned that up easily with a paper towel.


Anyone out there who thinks I'm a moron--you just don't understand. I cannot eat convenience food on a regular basis, nor can I serve it to people I care about with a clear conscience. I finally have another short order dish to add to my repertoire along with fried egg sandwiches, chicken burgers with cheddar cheese and Claussen dill pickle slices(a must), and Monte Cristo sandwiches. Oh, and cheese tortellini with browned butter and parmesan cheese. Woo hoo!


I don't wanna see another egg for a loooong time...

Not a great one this time. The light was bad and Lucas did not want to pose. I was just thinking how weird it is to have a cat that rather than meowing for a greeting, goes "Heh heh woo ooh!"


I've been listening to the same Kate Bush CD nonstop for a week. This is not healthy.

Thank you :D! I'm just frustrated that so many of my pictures come out so blurry. You can't use a flash with a cat because it hurts their eyes (not to mention it gives them that creepy red-eye)so everything depends on how sunny it is outside. I had to follow Lucas around on my hands and knees to get that shot. I was sure to give him a treat afterward!

Don't worry, I won't get too hung up on my achievement! ^_6 I usually enjoy trying new recipes, though cleaning up later is always a pain.

I used a non-stick ovenproof skillet. I have an electric stove, though, and I wonder if that's why I have so much trouble cooking simple things like eggs. I hear the oven part is better on an electric stove, but it's really hard to regulate the temperature on electric burners. Most people say that gas is the way to go.

Holy cow, what a nifty trick! I'll have to try it, 'cause man are omelets impossible.

I was thinking the same thing--that furry ball came in a set and it really looks like it's a tribble sprouted from Lucas. Maybe that's why he likes it so much?
