Uh oh, looks like we're going to have another windy night tonight. It's been snowing a lot more than they predicted this weekend. Enough with the winter weather already! I want to see some spring!


New Year's Dinner went pretty well last night. It was just the four of us eating (my older brother is here but slept through dinner because he stayed up all night reading or playing his X-box 360 or something), so we didn't go nuts with side dishes. We had slow-roasted Roast Beef (a spoon roast) with garlic-thyme compound butter, green beans, and smashed potatoes with sharp cheddar, sour cream and chives. We cooked the meat medium-rare, and it came out nice and tender, but oh man, those potatoes were AWESOME. We had lost the recipe, so we guessed on two cups of cheddar, a half cup of sour cream and two tablespoons of butter. Now that I think of it, that was the recipe for the filling for the twice-baked potatoes we made for Thanksgiving! They were probably horribly unhealthy, but it was a holiday! I had every right to stuff myself like a pig!


Leftover roast beef is good for sandwiches, too. I don't think my intestines can handle any more red meat, though. I'll leave it to everyone else. We only could make the roast beef because my brother and sister-in-law didn't come; I don't know if it's because of some kind of religious dietary restriction, but my sister-in-law can't eat rare red meat. Which means...if we want to serve them something other than freaking poultry, we'll have to do Pot Roast, which is cooked well done and shredded. Damn, that's a lot of fat.


Anything but ham. I hate, hate, hate making spiral ham. I only like to use it as a condiment in soup.


If our guests were like-minded we could make this fantastic dish with cheese tortellini, radicchio and peas in a bacon-parmesan cream sauce, topped with fresh breadcrumbs and chopped toasted walnuts and baked in the oven until it's bubbly. Why can't we make anyone like the food we cook? :O


For dessert last night Kristen and I had Ikea Applekaka. That's Swedish Apple Cake. I guess it was all right. I love apple desserts anyway, but even heated up in the microwave it still tasted too much like Freezer Cake. =_=


Last night I finished up Generation One in Phantasy Star 3. I think the whole chapter took me about 3 hours to complete. I had lowered the difficulty, though! I still have a bit of affection for this game that I didn't have for the obviously superior PS4. PS4 was more of a franchise game, while PS3 at least tried to do something different...
