The tuna-noodle casserole my mother used to make contained cream-of-mushroom soup and at least a pound of pre-shredded cheddar cheese. After some calculations I figured out that it had at least 60 grams of fat per serving!
This version is not low-fat by any means. However, you make a white sauce from scratch with whole milk, flour, chicken broth and butter rather than using cream-of-mushroom soup and there's no cheese involved. I think it has at most 20 grams of fat per serving. Which is still a heck of a lot better than 60...
The down-side is that it took me 2 hours from start to finish to make this dish. The plus-side is that it was delicious and made many leftovers. We've had it about ten times since we got the book and we'll be having it again!
